| Maple Walnut Muffins |

| These tasty treats are a snap to make and store in the freezer. Better than a donut hole, they are a source of fiber and manganese. |

| 1 cup oat bran 1 cup whole meal or whole wheat flour 2 ½ cups all purpose flour 4 teaspoons baking powder 1 cup chopped walnuts 1 cup Maine maple syrup 1 ½ cups skim milk ¼ cup canola oil 3 eggs 2 tablespoons maple extract In a large bowl, mix together the oat bran, whole meal flour, all purpose flour and baking powder. Stir in the chopped walnuts. In a medium bowl, whisk together the Maine maple syrup, skim milk, canola oil, eggs and maple extract. Add to the dry ingredients, stirring enough to just combine. Spoon into greased mini-muffin pans. Bake in a preheated 375 degree oven until a toothpick comes out clean, about 15 minutes. Makes 72 mini muffins. |
