| Banana Snack Cakes make the perfect mid-morning or after school snack. Unprocessed wheat bran is sometimes also labeled millers bran. Ask for it in your local supermarket, or the health food store. Extra-ripe bananas will keep in your freezer until you are ready to make these high fiber treats. |

| Combine in the bowl of your electric mixer: 2 eggs ½ cup brown sugar 3 ripe bananas (about 1 cup) 1 cup buttermilk ¼ cup canola oil 1 teaspoon vanilla extract 1 cup unprocessed wheat bran In a medium bowl, whisk together: 1 cup whole wheat flour ¾ cup all purpose flour 1 ½ teaspoons baking powder ½ teaspoon baking soda 1 teaspoon cinnamon Stir into the banana mixture. Stir in ½ cup chocolate chips. Grease 36 mini muffin pans. Spoon the batter into the muffin pans. Finely chop 1/3 cup of walnuts. Sprinkle the nuts on top of the cakes. Bake in a preheated 400 degree oven until a toothpick comes out clean, about 12- 18 minutes. Let cool on a rack. |
