| Looking for a healthy snack or dessert? Try these cupcakes made from unsweetened applesauce. They need no frosting and keep well for several days. They are a good source of dietary fiber, Vitamin K, Vitamin E and iron. I have even eaten them for breakfast! |

| Mix in a medium-sized bowl with an electric mixer: 1 cup unsweetened applesauce 1 egg 1/3 cup brown sugar ¼ cup canola oil Combine in a medium bowl: ¾ cup rolled oats (old-fashioned oatmeal, not quick cooking) ¼ cup wheat germ ¾ cup all purpose flour ½ teaspoon baking powder ½ teaspoon baking soda 1 teaspoon cinnamon Stir dry ingredients into the applesauce mixture. Stir in ¾ cup raisins. Spoon batter into a greased muffin tin. Bake in a preheated 350 degree oven until a toothpick comes out clean, 15 – 20 minutes. |
